Sukhiyan/ Sugiyan





A sweet snack with crunchy outer covering and soft and sweet goodness inside. I think this is a kerala dish. But i am not sure about it. 




I have a nostalgic feeling about this snack. My mother used to make this snack occasionally when we return from school in the evening. Those days, i felt very funny about the name "Sukhiyan". I don't know if there is any other name for this snack.




Today, i had made green gram curry in the morning. I saved a cup of cooked green gram, so that i could make this snack for my daughter. I was not surprised when she told me that she liked this snack, because every kid likes the taste of this dish. This is a healthy snack if the deep frying part is omitted. 




Ingredients

1 cup Green gram/ Cherupayar/ Moong(whole)
1/2 cup Jaggery (as per your taste)
3/4 cup Coconut (freshly grated)
1 tsp Cardamom powder
Water as required
1 pinch Turmeric powder
1/2 cup Maida/ All purpose flour
3 - 4 tbsp Rice flour
1 pinch Salt


Method


  • Cook green gram with enough water and once cooked, take off from heat and keep aside. Green gram should not become mushy and if excess water is left, drain it off.
  • Take a non stick pan. Melt jaggery with little water, strain and boil it again.
  • Add coconut and keep stirring. Let it simmer for sometime. 
  • Add cardamom powder. When the mixture slightly thickens, add cooked green gram.
  • Keep stirring and when the mixture thickens completely, transfer it into a bowl and let it cool.
  • In the mean time, heat oil for deep frying.
  • To make the batter : mix maida, rice flour, turmeric powder and salt in a bowl. Mix well to remove any lumps in the batter. Keep this aside.
  • When the green gram mixture cools down, make small balls out of the mixture.
  • Dip each ball in the batter and deep fry them in the hot oil.
  • When the sukhiyan turns golden colour, transfer them on to a tissue paper.
  • Serve them hot as a snack.
